Section 61-47.E - SHELLFISH SAMPLING AND STANDARDS1. Sampling and Testing. Samples of shellfish may be taken for scientific examination for public health purposes at any reasonable time or place by agents of the Department. Samples of shellfish shall be furnished as necessary by processors and operators of facilities, trucks, carriers, stores, restaurants, and other places where shellfish are sold. Receipt for shellfish used for sampling shall be given upon request. The type of test to be performed shall be included on the receipt.2. Adulteration Standards. In determining bacteriological adulteration of shellfish, the Department shall use an Escherichia coli Most Probable Number (MPN) of two hundred and thirty per one hundred grams of sample and a total bacteria count of five hundred thousand per gram. Shellfish containing levels of pathogenic organisms or other substances that render the shellfish potentially unsafe for human consumption shall also be deemed adulterated by the Department.S.C.
