Baked goods served at a portable unit for service of food, including, but not limited to, pastries, cookies and donuts, must be displayed under a cover or in a display case that has been approved by the health authority. Food service employees shall not contact exposed, ready-to-eat food with their bare hands and must use suitable utensils, including, without limitation, deli tissue, spatulas, tongs, single-use gloves or dispensing equipment.
