Section R. 408.18136 - Manually fed dough brakesRule 8136.
(1) The in-running roll of a manually fed dough brake shall be enclosed by a guard of not less than 11 gauge metal or material of equivalent strength extending to within 6 inches of the hopper bottom board and at a horizontal distance from the nip point of the rolls sufficient to prevent an employee's hand from being caught. The enclosure may be expanded metal for visual observation.(2) An emergency stop bar shall be provided on a manually fed dough brake so located, that if the operator slips and falls toward the rolls, or if the operator's hand is caught in the rolls, the body pressure opens a circuit which deenergizes the drive motor and a magnetic spring-set brake stops the rolls immediately.
