Nutrition services shall be provided in accordance with the requirements set forth in this Section.
All meals and snacks shall be prepared under the direction of a dietician or nutritionist and shall be provided in accordance with the requirements set forth in Subsection 9706.7.
All meals shall include hot foods and shall be equivalent to at least one-fourth (1/4) of the recommended daily dietary allowanced established by the Food and Nutrition Board of the National Research Council.
The ADHP shall furnish special diets, if required by the participant and prescribed by his or her physician.
The ADHP shall ensure that all participants are properly hydrated and that drinking water is provided in a safe and hygienic manner and is accessible to the participants at all times.
Program staff members, under the supervision of the dietician, nutritionist, or registered nurse, shall provide nutrition counseling and consumer shopping advice to participants and, if necessary, to their families or guardians.
The ADHP shall adhere to the following requirements to determine the number of meals and snacks to be provided to each participant:
Each ADHP shall ensure that all meals are prepared and served in accordance with the food safety requirements set forth in Title 25 DCMR.
